What’s for dinner?

Tonight we had breakfast for dinner. I could eat breakfast 3 meals a day. Yum!

Hubs made Breakfast burritos tonight for the first time…we can now add this to his vast culinary repertoire of eggs and grilled cheese.

These were super simple to make. Just the ticket after a hard day at work!

Ingredients:

  • Browned loose sausage (ours is from a pig we had raised locally)
  • Scrambled eggs
  • Freshly shredded Colby jack cheese
  • Jalapenos (I like Mt. Olive brand)
  • Tomatoes (fresh from my friend Tina’s garden – Thanks T!)
  • Guacamole (I like Wholly Guacamole’s 100 calorie snack packs)
  • All rolled up in a warm flour tortilla (corn tortillas would be equally as tasty)

    Now I want breakfast! We call it upside down dinner when we eat breakfast for dinner.
